Inspired by one of my most favourite restaurants in the world, Acqua al 2, in Florence, Italy, this is my take on their famous dish, the Blueberry Steak.

Reversed seared filet basted in wagyu tallow in a wild blueberry and port wine reduction. Served with a grilled peach and arugula salad with maple roasted Brussels sprouts and carrots.
